Nikki got her mission call in the mail on December 22! She was so excited. She called all her friends and invited them over. A mission call party!! She opened and read her call at about 7pm. There were cell phones open and in her face with friends and family who couldn't be there. Sorry we didn't have enough cell phones to get everyone! She opened and started to read "...you are called to serve in the ......." a big pause then started again "Utah Provo Mission....." She started laughing and said "I thought I got rid of that place." She read on " ...you will serve in the St. George Temple visitor center." She was so excited, although it was totally unexpected - who would have thought?! She has friends from school there, Alisha and Braeden just moved there, and she was planning on attending school there after her mission.
She is to report to the MTC on March 5, 2009. She is going to be a great missionary and do a terrific job - we are proud of you Nikki!

Some more snow pics
We have so many snow pictures, I though I would post a few more. Above is just one days snow on my van. Rick pulled out Nathans ski's and was pulling him around on the roads.
More snowball fights! And from the pile of snow that we got from shoveling the driveway - Rick and Nathan made a huge igloo.
All our snow is gone now - but we still have our igloo and part of our snowman - it is so weird to see it all gone so fast. IT WAS SO FUN!! AND BEAUTIFUL!!

Its a Winter Wonderland!
We are getting snowed in!!! We have really been hit with the "true" winter weather these last two weeks. It is beautiful to look at, but here in Washington it makes for hard driving. The roads are solid ice and now the snow is covering it. And its COLD! Our high today was 25 and this morning it was only 19. I will post pictures of our winter wonderland soon.

Our Holiday doings
More brownies!! Travis is having a great time baking/making all sorts of holiday goodies. He's made chocolate covered pretzels rods, gingerbread cookies, and has been experimenting with different flavors of hot cocoa. He is going to make us all fat!! But it all sure tastes good.
The Christmas Tree is up and I can hardly believe its ten days til Christmas. This year has gone by so fast.

Cold Weather
Nikki, Travis and Nathan each built one - we went through a lot a graham crackers and frosting- we even had to go borrow some powdered sugar from the neighbors to make more frosting.

Pikes Place
We hope everyone had a great Thanksgiving!! It was great to have Spencer and Jessie join us - hope you guys had fun.
On Saturday we went to Pikes Place Market. (The order of these pics are backwards :] Nathan was not to happy to be there, but slowly warmed up to the idea of being there. We walked around and went through all sorts of different shops. Then we went to this little place, I can't remember the name, they make the best little donuts. We got a couple of bags and ate them all up. Then we had to find a Starbucks, Travis had some gift cards and he wanted to try their mint brownies (like the ones he made that I posted in a previous post). We all got different kinds of hot chocolate and taste tested the brownie. We decided that we liked Travis's brownies better! Yeah Travis!!! We walked around some more and Nikki showed us the "gum" wall. It was pretty gross. On our way back to the car, we stopped in this little French pastry shop and bought a couple of bagettes to eat. We had a great time just being together as a family and I think even Nathan ended up having fun.

TWILIGHT
I joined in the Twilight frenzy! Last night I went to see the movie "Twilight" as a girls night out with ladies in the ward. It was really good. It was so funny with all the young teen girls and some even younger that started screaming when the movie started. I have only read the first book, but have already got the second one. If you haven't read it you ought to give it a try, you'll probably like it, then you can say you have read a vampire book too!

Yummy Brownies
Travis really likes to cook (mostly goodies) and on Friday he decided to try this brownie recipe that he found on line. Its one of those recipes that tries to mimic a restaurant taste. They turned out so good, the best brownies I've tasted. I have posted the recipe below.
Starbucks Peppermint Brownies
Brownies
1 19.5-ounce box fudge brownie mix
1/2 cup butter (1 stick), melted
1/4 cup water
2 large eggs
1/4 teaspoon peppermint extract
Peppermint Buttercream Frosting
1/2 cup butter(1 stick), softened
1 1/2 cups powdered sugar
1 tablespoon milk
1/4 teaspoon peppermint extract
1/4 teaspoon vanilla extract
Chocolate Frosting
1/3 cup milk
1/4 cup butter
1 12-ounce bag semi-sweet chocolate chips
1 teaspoon vanilla
1 cup powdered sugar
Decorative Icing (Travis saved some of the white buttercream frosting and just tinted it with red and green food coloring)
1 can white frosting (with fine tip)
1 can red frosting (with fine tip)
Festive and minty, without waiting in line
1. Preheat the oven to 325 degrees, then prepare a 9x9-inch baking pan by spraying it with a light coating of non-stick spray. Cut a piece of parchment paperor non-stick aluminum foil to the same width as the bottom of the pan, but make it much longer than the pan so that the left and right ends go up and out of the pan on the left and right sides. This will create a "sling" that will help you lift the brownies out of the pan after they've baked.
2. Make the brownie batter by first sifting the box of ingredients. This will remove the clumps. Add the melted butter, water, eggs and peppermint extract and mix the batter by hand just until all the dry stuff is mixed in. Pour the batter into your prepared baking pan and bake it for 50 to 55 minutes, or until a toothpick stuck in the center comes out clean. Allow brownie to cool before frosting.
3. Make the peppermint buttercream frosting by beating together 1 cup of powdered sugar and the softened butter in a medium bowl with an electric mixer. Mix in another 1/2 cup of powedered sugar, then add 1 tablespoon of milk, and the peppermint and vanilla extract . Mix for about 1 minute to make the frosting smooth. Add an additional 1/4 cup of powdered sugar if the frosting is too thin and light. You want a frosting that can be spread easily, yet it should be firm enough to hold up the layer of chocolate frosting that's coming next. When the brownie has cooled, use a spatula to spread the frosting evenly over the top. Put the brownie in the fridge to firm up the buttercream frosting .
4. Make the chocolate frosting by bringing 1/3 cup milk and 1/4 cup butter to a boil in a small sausepan over medium heat. Pour the chocolate chips into a heat-safe bowl. When the milk and butter comes to a boil, pour the mixture over the chocolate chips and let it all just sit there in the bowl for a couple minutes. Add the vanilla extract to the mixture and whisk until smooth. Use an electric mixer to beat in 1 cup powdered sugar until the frosting is smooth. Spread the chocolate frosting over the white frosting on the brownie. This recipe makes a little more chocolate frositng than you need, so hold back about 1/3 to 1/4 cup.
5. To add the decorative red and white icing if you decide to go for it: First apply the white icing to the top of the cake in a sweeping motion diagonally across the top of the entire cake, then add the red icing over the white in the same sweeping motion in the same direction.
6. Stick the brownie back in the fridge for about an hour before removing it from the pan and slicing it into 9 equal portions. The leftovers will keep well for several days covered in the refrigerator.
Makes 9 brownies.

Pumpkin carving and more hunting trips
Monday night we carved our pumpkins and Miracle (our dog) even got in on the action (and the only time she will be allowed on the table!) She was eating the pumpkin as we were cleaning them out. I guess that was her Halloween treat. We had a great time - I think the hardest part was trying to figure out what we wanted to do with our pumpkins. Below are the end results!

MORE HUNTING TRIPS
This last weekend was another little hunting trip for Rick and Nikki went with him. They left Friday morning and got home Sunday morning, just in time for Church. It was not a successful trip - they didn't see any deer and it was cold! But a great bonding time for the two of them.
Two weekends ago, Rick went hunting and took Travis and Nathan. No luck on that trip either and no pictures! I guess the only one left to go on a hunting trip with him is ME. Don't know if that will happen - its getting a little to cold for me to go camping!
